Natural reddish yellowish color derived from its seeds, known as annatto which is used as a food coloring. It is frequently used in the coloring of cheeses such as Cheddar or Mimolette, margarine, rice, smoked fish and sometimes as a cooking condiment. It is widely used in various culinary preparations in Latin America and the Caribbean both as coloring and flavoring.
